At last, I have finally figured out how to have meal prepped chicken to keep its flavor and be moist. I also use the same method with turkey breast.
- 4 chicken breast or 2 turkey breast
- Dried Herbs (thyme, parsley, mint, red peppers)
- Ground Pepper
- Olive Oil
Lightly drizzle some olive oil over the chicken and sprinkle with salt. Rub it in and then add the herbs. Let it sit for a few minutes.
Preheat oven to 250 °c. Next either on a grill pan or normal non-stick using med-high heat, cook the chicken until the edges turn white. Then turn the chicken over and cook till you get those nice grill/caramel markings, it takes about a minute on each side. Place them in a glass baking dish with a lid and bake the chicken for 15-20 minutes. *15 min. for fillet breast and 20 min. for whole chicken breast.
Remove from oven and let it sit for 10 minutes before serving. Once cooled place in the fridge to use it for meal prep. It is still moist when it’s cold from the fridge or when heated don’t forget to add the broth juices from the glass dish. Also, don’t waste the juices you can add it to bulgur or buckwheat for flavor.
